The determination of  the shelf life of food is essential to ensure quality and to protect consumers from the effects of degradation.

All sectors of the food and beverage industry are under increasing pressure to rapidly develop and launch new and innovative products to stay on the market. Part of the product development cycle is to establish an adequate lifespan. Considering the relevance of this topic FOOD SAFETY INTERNATIONAL NETWORK offers this 16-hour course, which will provide theory and practical examples aimed at evaluating and validating the shelf life of foods, with current criteria and methodologies to obtain an expiration date to obtain more reliable results in your food products. The course includes basic sensory evaluation practices analyzing texture, color and taste.

 

Methodology
The sessions will be theoretical and practical, including case studies with pasteurized, refrigerated, frozen, fresh, packaged and short and long shelf life etc. Each case study begins with a brief presentation of the product and the most relevant problem for its shelf life. Each participant will know updated data and procedures to solve the problem and learn to obtain a more reliable life of each product.

The workshop will also include short demonstrations of sensory evaluation to use various techniques to evaluate texture, color and taste in various foods. The basic statistical treatment of sensory evaluation will be carried out using Microsoft Excel, regression analysis and will create sensory evaluation sheets and rating scales.
