OBJECTIVES

• Provide a complete understanding of the cleanliness and disinfection of ready-to-eat food processing environments or those that require an additional step to be consumed.

• Learn the main factors for the development and implementation of a cleaning and sanitation program and its preparation for microbiological and allergenic validation.

• Develop, implement and administer a food safety management system and preventive controls based on risk that comply with FSMA regulations.

• Provide information on the sanitary design of equipment and facilities to achieve adequate sanitation, pest control and the absence of traces of allergenic ingredients.
